Sometimes you find yourself with an abundance of blueberries and some spare time. That exact situation is where I found myself yesterday. So taking advantage of this, I made blueberry-oat muffins. As one of my more healthy recipes, I recommend eating them warm because of their rather savory flavor. Also please note I barely measured anything in the muffins, I was listening to music and honestly who has time for measuring cups anyway. So just eyeball it, I have faith in you.
A super healthy, no mayo chicken salad. This version is really easy and you can bsaically use the leftover veggies in your fridge to throw in it. In mine I added, celery, dried cranberries, grapes, onion and a little spinach. I put the salad over freshly baked bread. Something you can learn how to make here. If you don't want to make a whole loaf, I have a reciepe for buttermilk dinner rolls that can be made in small batches.
Chia seeds are known for being a superfood. They also come in handy when you don't have any time in the morning. You can make this breakfast the night before. Plus it's in a mason jar so you look really cool. This mason jar meal is really nutritious, packed with fiber and actually fills you up. Even if it's not for breakfast it's also nice to have on hand as a snack.
