A super healthy, no mayo chicken salad. This version is really easy and you can bsaically use the leftover veggies in your fridge to throw in it. In mine I added, celery, dried cranberries, grapes, onion and a little spinach. I put the salad over freshly baked bread. Something you can learn how to make here. If you don't want to make a whole loaf, I have a reciepe for buttermilk dinner rolls that can be made in small batches.
Ingredients
boneless skinless chicken breast
greek yogurt
vegetables
Directions
1) Shred Chicken with a for. To do this hold chicken breast down on cutting board with fingers or fork and take a fork and pull at the ends.
2) Add Chicken and enough greek yogurt just to coat the shreds in a bowl.
3) Add in any additional veggies.
4) Put on a wrap, sandwich bread or in a pita.
