Sometimes you find yourself with an abundance of blueberries and some spare time. That exact situation is where I found myself yesterday. So taking advantage of this, I made blueberry-oat muffins. As one of my more healthy recipes, I recommend eating them warm because of their rather savory flavor. Also please note I barely measured anything in the muffins, I was listening to music and honestly who has time for measuring cups anyway. So just eyeball it, I have faith in you.
So let's make us some healthy muffins!
Ingredients (makes about 6-8 muffins)
1/2C Rolled Oats
1/4C Whole Wheat Flour
1/4C Flax Seed Meal
1/8C Brown Sugar
1/2 Tbsp Baking Soda
Dash of Salt
Dash of Cinnamon
1/2C Applesauce
1 egg white
1/4C Milk
1/2C Blueberries
Muffin Topping
Slivered Almonds, Brown Sugar, Oats
Instructions
Mix dry ingredients in a bowl.
Mix in wet ingredients.
Add blueberries.
Pour into muffin tins.
Top with muffin topping mix.
Put into oven 400 degrees F for 20 min.
