Cookie cups always look really impressive, not to mention they're incredibly delicious. You not only get the scrumptious cookie, but the tasty filling as well . (and they're actually pretty easy to make.)
I recommend buying pre-made cookie dough, unless you really want to whip up some. I used gingerbread cookies but you could easily do this with sugar cookies, chocolate chip, or really any cookie dough. Let your imagination run free friends with the cookie possibilities.
Cookie Cups
Cut out or roll out circles of cookie dough, about 1/4 inch thick and about 3 inches wide. Don't freak, these measurements aren't meant to be exact, just something to reference. Then take your disks of cookie dough and mold them in a super greased mini cupcake pan. Cook them for as long as the packaging says and then let them cool for about 10 minutes before removing.
Filling
I chose to make a peanut butter chocolate chip filling. However there are zillions, yes zillions of options. For my filling, melt 2 tbsp of peanut butter in the microwave, then mix with a cup of greek yogurt. Add in chocolate chips or nuts to your liking. Then fill the cookie cups with the mousse and voila! A Pinterest worthy dessert.
